Chocolate and Lemon grass: a fresh, citrus and lightly green aroma characterises Indian verbena known as lemon grass, a name which evokes its slightly citrus flavour. All over south-east Asia, the fresh bulb is grated or cut into thin strips as a garnish. At Dolfin's, the leaves are finely ground and a few drops of essential oil are added to the chocolate at the last minute to bring out the taste as naturally as possible. Lemon grass brings a freshness to the chocolate.
