Bitter-sweet and full-bodied this vinegar is pleasant on the palate and its aromas conjure up the old cellars of Jerez. Deep mahogany-coloured and sweet-smelling with an aftertaste of "Palo Cortado" wine, it is the fruit of careful and meticulous preparation and many years of ageing in oak casks. The techniques applied to ensure its acetic fermentation follow the "mozarabes" process used during the period when Andalousia was called "Al Andalus" (14th century).
Use: salads, sauces, grilled fish, vegetables, etc.
