It is one of the strongest tasting and most persistent of our French honeys and is considered irreplaceable by those who love honey "with a strong character". Unlike some chestnut honeys that come from both flower nectar and honeydew (i.e. from the sweet secretions of aphids on the trees), this MATIN D'ABEILLE honey comes exclusively from flower nectar. This accounts for its rather fast crystallisation.

Taste: strong tasting, very long on the palate, woody/malty, aromas of wood
