Metcalfa
This honey does not come from flower nectar but from honeydew. Honeydew is produced in abundance by metcalfa primosa homopteran insects (from the flattid family) after feeding on the sap of a wide variety of plants. Bees then feed on the insects and produce a very unusual honey. MATIN D'ABEILLE's metcalfa honey, harvested in the Piedmont, is very dry and therefore very thick. Its smooth texture and toffee-like aromas are much appreciated. It can be put to all types of use, including cooking.
Taste: of medium strength, malty, balsamic and musky with aromas of fresh fruit, jam, dried figs, coffee and leather, it is smooth and sweet
